Makes 4 x Tortillas

Ingredients:

2 x Eggs
1 & 1/2 Cup Finely Grated Zucchini
1/4 Cup Coconut Flour
1/2 Cup + 1 Tablespoon Arrowroot Flour

1 Teaspoon of each..... 
Mexican Chilli Powder
Cumin Powder
Pepper & Salt

Directions:

  1. Preheat Oven 180 Degrees
  2. Line a Baking tray and cover surface with a bit of olive oil. *A tiny bit!!*
  3. Grate zucchini and place in the centre of a dish towel and squeeze all excess liquid. You will be surprised how much water will come out. Then transfer to a mixing bowl.
  4. Add remaining ingredients and mix well.
  5. Shape into tortilla size and cook for about 15 Minutes or until golden brown.

Add your protein, veg and a bit of cheddar cheese!
